Little Rabbit Baking Co. is owned and operated by Gabriel Morris in Hamden, CT. Ever since she was a child she loved being in the kitchen. Her passion for food, and most importantly desserts, was born from her time spent baking with her grandmother. She was able to turn this passion into a career by attending The French Culinary Institute in New York. Following her formal Pastry Chef training, she had the privilege to intern in Beziers, France where she draws much of her inspiration for the delicious treats she offers today.
Gabriel chose to open a gluten free bakery due to an autoimmune condition. She understands exactly what it’s like to not be able to enjoy a treat and wanted to create a place where anyone with a gluten issue could come and enjoy delicious scratch made baked goods.
